Lemon mousse

Everyone knows the chocolate mousse which is a nice dessert but ab it heavy. Try this lemon mousse easy to eat at anytime and you will probably forget about the other mousses.

Ingredients:

3 eggs
2 large lemons
80 g sugar
1 tablespoon lemon zest
2 gelatin sheets
1 pinch of salt

Directions

Grate 1 lemon and set 1 tablespoon lemon zest aside. Squeeze the 2 lemons in order to extract the lemon juice.
Soak the gelatin sheets in cold water. Crack the eggs and separate the egg whites and the egg yolks.
In a bowl mix the egg yolks with sugar until the mixture whitens.
In a small saucepan, heat the lemon juice over low heat just to warm a little bit. Once the lemon juice is warm add the eggs/sugar mixture and stir until thickens. Remove from the heat and stir in the lemon zest.
Drain the gelatin sheets and add to the mixture. Stir well until blended.
In another bowl beat the egg whites with a pinch of salt until thicken and very firm.
Gently fold in the lemon cream.
Divide into glasses or ramekins and place in the fridge for at least 2 hours.
